Pinterest Artichokes and Cheesy Grits {review}


This Southern gal loves a big bowl of cheesy grits, it's a weakness! Normally I garnish my grits with bacon, but I am happy to have a open mind about stepping outside of the box and trying new recipes. At  first I was skeptical, but my goodness, the artichokes tasted amazing with grits.

The only difference is we used canned artichokes instead of fresh since our grocery store didn't have any, boo. I am really anxious to try it with fresh artichokes next time around.

Pinterest Salmon in a bag {review}

I am totally behind on posting, sorry y'all! Between starting a new job, coordinating a local toy drive, getting major house projects done and cooking yummy meals for my husband, I have lost track of time. But I am happy that I have at least been keeping up with new Pinterest recipe a long the way.

Last week in the midst of the craziness I decided it was time to find simple/quick meal that could be ready in 30-40 minutes. I decided to make Salmon, served with a side of grits and garnished with artichokes {see in next post}.

This will be one of the simplest dishes you ever make. Tin foil, olive oil, lemons, salmon, S+P, stick  it in the oven for approx 20-25 minutes, BAM! The dish is done, how easy is that?

Pinterest White Chicken Enchiladas {Review}

Today was a full day of starting a annual Christmas toy drive I do for a local organization, Broken Arrow Neighbors. There is no better feeling than the feeling of helping out families in our communities that need a lending hand. I am so honored that I have the opportunity to team up with this organization and encourage others, like you, to join a local organization. 


I've been eying this dish for a few weeks and had planned on making it last night for ''Taco Tuesday'', but we still had leftovers to eat from Monday night. So tonight was our make-up day for yesterday!

This dish is quite easy to make, but we did make some changes to the recipe. Before we cooked our chicken we seasoned it with: cumin, paprika, garlic and chili powder, then put it on our panini until it was fully cooked. After it was cooked we placed it in a separate bowl to cool off then added the cheese.My husband has found if you cut chicken while it is hot it gets dried out pretty quickly. Also, we substituted sour cream for Dannon plain Greek yogurt and the regular flour tortillas for whole wheat.

Overall, we absolutely loved this recipe. Currently my husband is laying on the couch because he is so full from all the goodness.

Pinterest Baked Apples with Oatmeal Struesel Topping

Tonight my husband went to go catch up with one of his buddies, so it's just me and Wisco (our dog) hanging out. I got really bored and wanted to do something else besides clean, so I decided to find another apple recipe! Note to self: Don't buy a five pound bag of apples again. Of course, while browsing on Pinterest a friend repins a apple streusel recipe that looked amazing and luckily enough I had all the ingredients, yay!

The recipe called for 3-4 apples sliced in half, I only had two. So I had to cut all the ingredients in half, the outcome was perfecto'! Tasted like a homemade apple pie, and I served it with Breyers homemade vanilla bean ice cream, simply delicious! Ps, adding the whole wheat flour was genius!


Next time your at the store grab a few apples and give this recipe a shot, you'll love it!

Pinterest Lazy Sunday Casserole {Review}

We are changing this to ''Lazy Monday Casserole'', because it's just one of those day!! Over the weekend I made my list of recipes I wanted to make this week and finding a ''healthy'' German meal was on that list. I browsed and browsed various titles for bratwurst recipes, they all sounded good, but I just wanted something with more veggies and no sauerkraut. Finally after about a hour of searching I found this recipe and was one happy gal! It's actually in the oven as I am writing this and smells INCREDIBLE!

My husband comes from a German background, so I thought ''hey it's Oktoberfest month, let's have our own little celebration''!!! Tom was totally down for it. This isn't a traditional German meal, but has some similarities to other recipes I was researching. I wanted to spice up the recipe by substituting the chicken broth for beer, but we didn't have any. Definitely going to try it out next time though, I think it would taste extra amazing!

 There were a few things I did a little differently: Instead of plain Johnsonville Bratwurst I used their cheddar brats. For the seasoning I added a little bit of rosemary, thyme and parsley in the olive oil/chicken broth mixture. We absolutely loved the outcome.

Finally, after smelling it bake in the oven for over one hour it's time to dig in!


It was absolutely delicious! I am so thrilled I found this recipe and my husband would not stop saying: ''oh my gosh this is amazing''! Happy husband = Happy wife. Yet again my friends, another successful Pinterest recipe we highly recommend!

Pinterest Apple Cinnamon Chips

Two weeks ago I bought a 3 pound bag of apples thinking I was going to make apple spiced cider, but that obviously hasn't happened. So I needed to utilize some of those apples quickly and found these yummy apple chips.

Hollye Jacobs, wow I could say a lot about this blogger. She is a breast cancer survivor, Forbes top 100 websites for women, mother and a inspiration. I so happy that I had the chance to browse through her blog and look forward to keeping up with her post. Hollye actually snagged this recipe from With Style and Grace. I love the cycle of other bloggers sharing recipes or ideas, it's so much fun!

We don't have a mandoline (guess that means a trip to Williams Sonoma is needed), but they turned our great cutting them this way as well. Sorry I don't have a after picture, kind of ate them all pretty fast! Looking forward to making these again soon and adding them in my oatmeal!

Pinterest Zucchini Cheddar Bread {Review}

Saturday at 8:30pm I went on a baking frenzy, it was quite fun. The past couple of weeks I have been seeing zucchini pics show up more frequently on my feed. My husband says he really likes the breakfast muffins, but for me I cannot eat a bunch of bread in the AM. We compromised and I decided to go with this recipe.

I really enjoyed browsing through Kat's (the blogger) blog. Her pictures are amazing and every recipe sounds amazing. I am a pro banana bread maker but that's about the extent to my bread making, so this recipe was exceptional. The recipe is very is to follow and simple to make. After baking in the over for approx 1 hour it was ready to take out the bread and let it cool for about 15 minutes. I was so impressed how well it turned out and Tom really liked it as well. He said the only thing he would do differently is add a little more salt to the recipe, easy peasy.

This morning we woke up and I made brunch and served the bread on the side, delicious. It's been a wonderful snack throughout the day and I am now really excited about trying more bread recipes in the future! Thanks Kat for making it so much fun, we enjoyed trying this yummy recipe!

Pinterest Mushroom Sauce {review}


This week has been absolutely crazy! I said good-bye to Starbucks and decided to accept a awesome offer with JCP (JCPenney's). Not only that, I also started a online course with Stanford University that they are offering for FREE called ''Crash Course on Creativity''.  My first day was today and there are over 30,000 people who signed up from all across the world, amazing! So the blogging has been put on the back burner pretty much all week, but I am happy I was able to get one recipe review posted!

We skipped Taco Tuesday (making up for it right now, yum!) and went ''Carrabbas style''. Sweet Pauls sweet skillet mushroom sauce picture has been blowing up my newsfeed a lot lately. I finally decided to check it out and fell in love immediately. By the way Sweet Pauls blog is amazing, can't wait for you to check it out! His recipe is incredibly simple and the aroma is unbelievable! My husband could smell it right when he walked up to the front door coming in from his hike.

The only changes were: instead of using spaghetti noodles we used rigatoni.

Pinterest Microwave Baked Apples {Review}

Baked apples, oh how I love them! There is just something so comforting about baked apples, I could eat them all the time. Actually, with the new recipe I  discovered last night on Pinterest I might be eating all them time!

This recipe is just for one person, which I love because nothing will go to waste! You cut one apple into slices, add it into a freezer size ziploc bag, place all other ingredients inside the bag, give it a good shake, place the bag into the microwave for 2 minutes, VOILA'! Eat them as is or enjoy them with a (BIG) scoop of Breyers Vanilla Bean ice cream!



I was totally shocked how good they turned out! Plus there is literally no clean up, ahh love it! Next time your at the grocery store grab a apple or two and try this recipe out, you won't be disappointed!

Pinterest Crockpot French Onion Soup {Review}


Do you have a favorite soup? I absolutely love french onion soup, it's a perfect soup for all seasons! Every year my husband and I spend a week of our Summer back in his hometown, Elkhart Lake, Wisconsin. I love this little quaint resort town. One of my favorite things to do is visit a local restaurant called: Lola's, they serve the best French onion soup!

Ever since my first visit to this restaurant I have been so eager to make it. There are so many great recipes out there, but this one truly stood out the most. The blogger adapted this recipe from Tyler Florence from the Food Network channel. Jessica, the blogger, her pictures are fabulous, I love her passion throughout her blog about cooking and have been tweeting her about how I couldn't wait to try this recipe out!

The recipe calls for beer, but there are such a wide variety of beers out there that we skipped that and substituted it for a dry white wine. It was a perfect substitution!

This morning while at Panera having brunch with my friend I picked up a fresh warm baked french  baguette, which is placed on top of the soup, yummy! After work I came home and with no hesitation and made a big bowl! I had ants in my pants, couldn't wait any longer! After broiling the soup/cheese for 3-5 minutes in the oven it was finally time to take my first bite, it was just simply amazing! I was totally blown away how awesome this recipe was and so was my husband! Thank you Jessica for posting this recipe, I am so glad I pinned it, tried it and reviewed it!

Pinterest Creamy White Chicken Artichoke Lasagna {Review}


Wow, I am so happy that I decided to start blogging about Pinterest recipes. It has shown me there are a lot of really talented cooks/bloggers out there. Everyone's stories are so unique and their personalities just burst as you are reading their blog posts. It truly inspires me and just makes my blogging journey worthwhile, thank you!

Tonight I decided to cook an Italian dish, my favorite. Honestly I am not sure who loves this recipe more? Me or the other blogger, Jillee? She grabbed this recipe off of Kraft Food, so glad she shared it because it's a new favorite dish!

We have nothing but positive feedback about this recipe and didn't change one thing, yay! Oh no! I Totally just realized that I forgot the basil, what a goof! Well I know it would have tasted extra amazing with fresh basil, guess I will just have to make it again, woo-hoo!


 Excuse the raw chicken pic, but the smell was just amazing! Added a dash of parsley, salt & pepper and let it cook till perfection!

Pinterest Baked Taco Ring {review}


Do you have a weekly family dinner tradition? If not you totally should, it's so much fun! Every Tuesday night we have a taco dish of some sort. We love it because there are so many different taco dishes, can't wait to share more recipes with everyone.

 Last night I kept stumbling upon the ''baked taco ring'' pin and decided to give it a shot tonight. It is totally different and that's what I love about it.

The changes I made were pretty simple: substituted the sour cream for Greek yogurt , ground beef for JennieO ground turkey and I didn't have a round pizza pan so I used a rectangle baking sheet which worked perfectly. Of course my husband had to add his ''special'' touch with a dash of cumin on top and lime slices, so cute!

Pinterest 1-2-3 Mug Cake {Review}

I have seen this recipe numerous times on Pinterest and have heard a couple of my friends talk about it. Seriously, I cannot believe I didn't try this out a long time ago, it's genius! All you simply have to do is buy one box of Angel Food cake mix and another flavor cake mix of your choice. You mix both cake mixes in a tupperware container or in a freezer ziploc bag. Add 3 Tbsp cake mix into a coffee mug + 2 Tbsp water, mix well, microwave for one minute, Viola! We added homemade whipped cream on top, but it would be really good with ice cream as well, yum!!

Pinterest Spaghetti Squash AuGratin {review}

Lately I have been on a spaghetti squash kick. I needed to find a way to spice it up a bit so of course I did the normal Pinterest search and found this recipe.

One thing that I really loved about this recipe was finding a quicker way to cook the squash, microwaving it in 1/4 Cup water, so simple! The Only thing we changed in the recipe was substituting the sour cream for plain Greek yogurt. Also, the aroma when cooking the onions, red pepper flakes and thyme was simply amazing.


I asked my husband to rate it from 1-10 and he gives it a 8, but that's because he was devouring bbq ribs. I definitely cannot wait to make this as a side for our Holiday dinners, so good!

Pinterest Crockpot BBQ Ribs {Review}

I could write a story, but I am not going to bore you with our agenda today. All I have to say is this recipe is a must have in your recipe box. Tom (my husband) all he did was stand over the stove and kept saying ''oh my gosh, these are so good, seriously, I hope you don't want a lot''. Needless to say I ate one rib and let him have the rest. Heather (the blogger) he is in that rib coma you mentioned earlier, thanks so much for sharing your recipe, it got two thumbs up!

Oh, we didn't get to the broiling part because my hubby couldn't wait any longer! Either way, they taste amazing!

Pinterest Greek yogurt mini cheesecakes

We love Oikos plain Greek yogurt, it's a staple in our house. It's a great pair with granola, fruit, smoothies, substitutions {sour cream, mayo, etc}, dips and etc. Tom and I don't eat a lot of sweets really, but I wanted to give these mini treats a try. 

The ingredients are simple: Graham crackers, sugar free/fat free cheesecake pudding mix, Almond milk {I used soy}, Oikos Greek yogurt and that's it, awesome, huh?!?! You can add fresh or like we did frozen mixed berries on top and the blogger drizzled a little sugar free maple syrup for a little extra flavoring, yum! 

After 30 minutes we took them out of the freezer and gave them a try. They were fantastic, light and flavorful. Only downfall, they needed to be left in the freezer for at least a hour, they thawed pretty quickly. These are perfect little treats for Holiday parties and really healthy too!

Pinterest Skinny Chicken & Broccoli Alfredo {Review}

I never thought skinny + alfredo would go together, but they do, really well! This gal is a pasta junkie, ask anyone in my family or my close friends. This week I was excited about trying out this recipe, especially because I had the opportunity to make the sauce myself, a first.

The only thing different we did was add a little extra olive oil over the top and a pinch of parsley. Overall, it tasted great, directions are easy to follow and there were leftovers, yay!
