Pinterest Chicken bacon wild rice soup

A few months ago I ventured out into making my first ever homemade soup: ''roasted cauliflower white aged soup''. It turned out great and made me eager to find another soup recipe to make for the Winter season. About two weeks ago I came across this soup and it sounded absolutely amazing. Well, of course it did because... it has BACON in it!

This southern gal was super ecstatic about attempting another homemade soup. The preparation was pretty simple, I accidentally screwed up the flour and butter mixture the first time, luckily I didn't put any of the half-n-half in yet. Second time around I got the mixture nice and smooth. I actually added a couple extra tablespoons of cooking sherry and a dash of rosemary, it was a great addition.

Now, I do have to agree, it does taste extra good the second day. I had leftovers this afternoon and the flavors of the bacon and other seasonings just POPPED! My husband ate half the pot, shhh, don't tell him I told you, but that proves that it was really good!

Honestly, I got so caught up in making it, then devouring it, that I don't have a really good picture to share, boo! But this definitely is an easy homemade soup recipe, perfect for the Winter time and I think you should go to the grocery store and buy the ingredients and make it this upcoming week!

Pinterest Goat cheese, caramelized onions, spinach quesadilla

Monday's aka Monday blues, seems like the longest/craziest day. I wanted tonights dinner to be extremely easy and healthy. I have been not eating very healthy the past week-ish, so I needed to nip that in the butt and get back to incorporating more veggies into our meals.


Luckily a couple weeks ago I came across this recipe and so happy I added it to my board! It looked good, sounded good and had the easiest ingredients.

My husband actually wanted to add chicken and caramelize the onions in white wine, yum! We also used our panini instead of using the skillet. This truly was the easiest recipe, clean up, not much of any and it was very fulfilling.

Pinterest Buffalo Chicken Rolls

Getting back in the groove of blogging again. I totally forget how much of a stress reliever it is. A couple weeks ago I went on this buffalo sauce craving, I wanted it on everything, okay, I am exaggerating a tad, but seriously it was a little weird {no I am not pregnant, yet.}. Fyi: Targets Archer Farms buffalo sauce is the bomb-diggity.

While I was on the hunt for buffalo recipes on Pinterest, I not only stumbled upon the last recipe, but also this Weight Watchers recipe. I love using egg roll wrappers, they are so much fun, you can make tons of different things with them {ie: Mozz sticks, southwest egg rolls, taco egg rolls, baked apple egg rolls}.

I am so sad the picture I had of these scrumptious rolls got deleted on my phone. But they turned out identical to the other bloggers. In their recipe they add hot sauce instead of buffalo sauce. I can't tolerate ''hot-hot'' sauces, so we just used our Archer Farms buffalo sauce. I am sure they tasted very similar.

They were zesty and packed with lots of flavor. I can't wait to make these as an appetizer when we have friends over next time. I am so thrilled I tried this recipe out. Next time you crave buffalo sauce give these a try!

Pinterest Buffalo Chicken - Vegetarian Style

I have been such a slacker lately on the Pinterest recipe reviews, argh! Recently I started to do one recipes a week, but looks like I will be picking back up on doing 3 a week in about a week-ish!

It's so easy to grab a bag of chips in the pantry, make a bowl of salsa, sit on the couch and just munch away until next thing you know you're not only half way through your weekly tv show, you also just ate half the bag of chips, oops! So, Tom and I decided that we needed to find something healthy and flavorful to fulfill our not so healthy cravings. Of course I hopped onto Pinterest and began the search and next thing I knew I was totally focused on this recipe. Never would I have thought to add buffalo sauce to cauliflower, seriously sounds gross at first, but golly gee it is by far one of our FAVORITE appetizers to make.


Doesn't it look so yummy?!?! The cauliflower is cooked to perfection, the sauce + the blue cheese/blue cheese dressing was so flavorful, it was hard to stop eating it. Hope you give it a try sometime, you won't be disappointed at all, I promise!

Pinterest Artichokes and Cheesy Grits {review}


This Southern gal loves a big bowl of cheesy grits, it's a weakness! Normally I garnish my grits with bacon, but I am happy to have a open mind about stepping outside of the box and trying new recipes. At  first I was skeptical, but my goodness, the artichokes tasted amazing with grits.

The only difference is we used canned artichokes instead of fresh since our grocery store didn't have any, boo. I am really anxious to try it with fresh artichokes next time around.

Pinterest Salmon in a bag {review}

I am totally behind on posting, sorry y'all! Between starting a new job, coordinating a local toy drive, getting major house projects done and cooking yummy meals for my husband, I have lost track of time. But I am happy that I have at least been keeping up with new Pinterest recipe a long the way.

Last week in the midst of the craziness I decided it was time to find simple/quick meal that could be ready in 30-40 minutes. I decided to make Salmon, served with a side of grits and garnished with artichokes {see in next post}.

This will be one of the simplest dishes you ever make. Tin foil, olive oil, lemons, salmon, S+P, stick  it in the oven for approx 20-25 minutes, BAM! The dish is done, how easy is that?

Pinterest White Chicken Enchiladas {Review}

Today was a full day of starting a annual Christmas toy drive I do for a local organization, Broken Arrow Neighbors. There is no better feeling than the feeling of helping out families in our communities that need a lending hand. I am so honored that I have the opportunity to team up with this organization and encourage others, like you, to join a local organization. 


I've been eying this dish for a few weeks and had planned on making it last night for ''Taco Tuesday'', but we still had leftovers to eat from Monday night. So tonight was our make-up day for yesterday!

This dish is quite easy to make, but we did make some changes to the recipe. Before we cooked our chicken we seasoned it with: cumin, paprika, garlic and chili powder, then put it on our panini until it was fully cooked. After it was cooked we placed it in a separate bowl to cool off then added the cheese.My husband has found if you cut chicken while it is hot it gets dried out pretty quickly. Also, we substituted sour cream for Dannon plain Greek yogurt and the regular flour tortillas for whole wheat.

Overall, we absolutely loved this recipe. Currently my husband is laying on the couch because he is so full from all the goodness.
