Cilantro Lime Dressing - Pinterest Review

We absolutely love having cilantro in our house as much as we can. Unfortunately, no matter what tricks we try to do to make it stay fresh longer it seems to fade away after 3 days. I wanted to make sure it was fresh enough for when we had our weekly taco salads, and I came across this dressing.

I have never ventured out into making my own dressings before, so this was a first for me. There aren't many ingredients and the steps are very simple. One thing I did differently was use our choice Greek yogurt that we already had in our fridge. By the way, if you have not tried substituting your sour cream for plain Greek yogurt, you need too!

After finishing all the steps I put it in the fridge for an hour to let it chill before we served our taco salads. It was a refreshing and perfect addition to our salads and I look forward to making it weekly now to go with our taco nights!

Green Goddess Grilled Cheese Sandwich - Pinterest Review

Toasted cheese sandwiches have been around since ancient times, according to food historians. The modern version of the grilled cheese originated in the 1920's and then the ''Cheese Dream'' was popular during the Great Depression time.

The grilled cheese was originally made as an open sandwich, but the top slice of bread became popular in the 1960's. Today there thousands of variety grilled cheeses out there.

Last summer when my husband and I were in Chicago we visited the Michelin Star chef, Graham Elliot's (MasterChef) sandwich shop where we discovered the craziest grilled cheese ever. This sandwich consisted of Campbell's tomato soup, handful of sharp cheddar cheese, then last topping was a dozen fresh cheese curds, then pressed on a panini grill till perfection. It held high standards for a long time. I have been informed by my husband who is from Wisconsin that he knows of a grilled cheese back in his hometown (Elkhart Lake, Wisconsin) that will blow the one I had in Chicago out of the water. I guess we will see next month if this is true or not? Check out all this amazingness...

Last week I had a craving for a grilled cheese, but didn't want an ordinary grilled cheese.  I came across this unique ''Green Goddess' that sounded perfect to me! Ingredients included: Pesto, white melty cheese, spinach, goat cheese (which I used feta since I already had it in the house), avocado and I added a little bit of fresh basil to mine. This green goodness was absolutely delicious and fulfilling, and I look forward to devouring another one sometime soon!

Summer Vegetable Tian Recipe - Pinterest Review

Well, hello there! It has been a whopping 6.5 months since our last post. We are back with new recipes, better pictures (thank the LORD) and here is our first recipe to kick-off the new season of blogging!

I can be like a kid when it comes to my veggies. I don't like them raw, they can't be too hard or too mushy, or I won't touch them. About two months ago we got a Sprouts farmers market grocery store. At first I thought it was going to be an overpriced grocery store like... don't get mad... WholeFoods. I finally went to check it out to be amazed by the inexpensive price tags on all their items that were USDA organic. Needless to say I walked out the door spending $150, and have gone back every two weeks since.

Any ways, with this new discovery I have become more prone to buying lots of veggies. Kale is my new favorite, and cucumbers taste like they are home grown. With all that said I have been on the frenzy to make a lot of new veggie dishes that my husband and I can both agree on. He likes all the raw veggies and what not, yuck!

While browsing Pinterest I discovered this beautifully pictured Summer Tian veggie dish. It was a must make dish on this weeks menu. This week I started to take over the kitchen with all new recipes, my husband is loving it, who's wouldn't?

This recipe is easy peasy. I made it within 20 minutes, stuck it in the oven while my husband was on his way home and voila', it was ready to eat by the time he walked in the door!

Pinterest Chicken bacon wild rice soup

A few months ago I ventured out into making my first ever homemade soup: ''roasted cauliflower white aged soup''. It turned out great and made me eager to find another soup recipe to make for the Winter season. About two weeks ago I came across this soup and it sounded absolutely amazing. Well, of course it did because... it has BACON in it!

This southern gal was super ecstatic about attempting another homemade soup. The preparation was pretty simple, I accidentally screwed up the flour and butter mixture the first time, luckily I didn't put any of the half-n-half in yet. Second time around I got the mixture nice and smooth. I actually added a couple extra tablespoons of cooking sherry and a dash of rosemary, it was a great addition.

Now, I do have to agree, it does taste extra good the second day. I had leftovers this afternoon and the flavors of the bacon and other seasonings just POPPED! My husband ate half the pot, shhh, don't tell him I told you, but that proves that it was really good!

Honestly, I got so caught up in making it, then devouring it, that I don't have a really good picture to share, boo! But this definitely is an easy homemade soup recipe, perfect for the Winter time and I think you should go to the grocery store and buy the ingredients and make it this upcoming week!

Enjoy!

Pinterest Goat cheese, caramelized onions, spinach quesadilla

Monday's aka Monday blues, seems like the longest/craziest day. I wanted tonights dinner to be extremely easy and healthy. I have been not eating very healthy the past week-ish, so I needed to nip that in the butt and get back to incorporating more veggies into our meals.

Luckily a couple weeks ago I came across this recipe and so happy I added it to my board! It looked good, sounded good and had the easiest ingredients.

My husband actually wanted to add chicken and caramelize the onions in white wine, yum! We also used our panini instead of using the skillet. This truly was the easiest recipe, clean up, not much of any and it was very fulfilling.
