Today was a full day of starting a annual Christmas toy drive I do for a local organization, Broken Arrow Neighbors. There is no better feeling than the feeling of helping out families in our communities that need a lending hand. I am so honored that I have the opportunity to team up with this organization and encourage others, like you, to join a local organization.
I've been eying this dish for a few weeks and had planned on making it last night for ''Taco Tuesday'', but we still had leftovers to eat from Monday night. So tonight was our make-up day for yesterday!
This dish is quite easy to make, but we did make some changes to the recipe. Before we cooked our chicken we seasoned it with: cumin, paprika, garlic and chili powder, then put it on our panini until it was fully cooked. After it was cooked we placed it in a separate bowl to cool off then added the cheese. My husband has found if you cut chicken while it is hot it gets dried out pretty quickly. Also, we substituted sour cream for Dannon plain Greek yogurt and the regular flour tortillas for whole wheat.
Overall, we absolutely loved this recipe. Currently my husband is laying on the couch because he is so full from all the goodness.
