Grilled Stuffed Peppers

Our days are so busy around here, and when dinner time rolls around making a gourmet meal is not ideal. This weeks task was to create a dinner menu that would be quick and easy. Tuesday nights meal was, Grilled Stuffed Peppers. Most recipes for Stuffed Peppers, requires you to bake them in the oven, which is great, but grilling them just makes the flavors POP even more!

Prep time: 10 minutes
Grill time: 30 minutes
Pre-Heat Grill with coals on one side.

In 40 minutes you will have healthy, flavorful, grilled peppers. 

Ingredients:


4 bell peppers
1 pound ground turkey
1/2 onion chopped
2 garlic cloves minced
2 cups brown rice
1/2 cup chicken stock
Salt & Pepper to season 
 Olive Oil
1/2 cup cheddar cheese


 Brown your meat (If using beef drain fat), then mix in your chicken stock, onions, garlic and let it simmer for 5 minutes. Cook rice according to package directions. Mix in rice with all the other ingredients. 




Cut the tops off peppers, remove core and seeds.



 Stuff peppers, then place peppers on a preheated grill over indirect heat.




Put your lid on and let the peppers grill for 25 minutes.




Top with cheese, then grill for another 5 minutes with lid on top. ENJOY!

Grilled Pineapple

We absolutely love to be outside cooking on the grill during the Fall time. This Summer our missionary friends came back from overseas to visit family and friends. We had the privilege to spend a lot of quality time with them, along with other local friends of ours.

One day we were grilling out burgers, brats and veggies after church. Our friends who are from overseas wanted to show us how to make a ''Brazilian Grilled Pineapple'' for dessert. I was so skeptical about eating a grilled pineapple, just seemed so weird to me? I was totally shocked, it was so simple and flavorful, and now a favorite item to cook on the grill.



Preparation:


 
CINNAMON.. FRESH OR MCCORMICK!



 



 Florida's Natural Cane Sugar. 

Medium heated grill. Serving Plates and Hungry Belly's.



1. Cut the skin off around the pineapple. Don't cut the stalk off.

2. Combine Cane Sugar and Cinnamon into shallow mixing bowl.



 
3. Rotate pineapple and coat thoroughly.  

4. On a medium heated grill, place your pinapple on the grill and rotate on each side for 2-3 minutes until some grill marks appear. 




5. Take off grill and cut off a inch all the way around and continue to repeat steps 2 & 3. It will even cook through the core. 

The whole process can take up to an hour, but it's a great time to enjoy your company outside in the beautiful Fall weather or anytime of the year!

Grilled Jalapenos wrapped in bacon




It's my FAVORITE time of the year! 
College Football, Fall is in the air, Tailgating, Parties and wearing my favorite colors BLUE & ORANGE!!!!
This is also the time of the year where I am the most home sick, because I am missing out on going to the FLORIDA games and all the festivities!!!  




 This year I decided to make football season fun, not only just for me, but also trying to entice my husband with some wonderful savory, scrumptious, finger licking good food! 


Well before we get started on tonights treat, I am not sure if my husband knew what he really was signing up for when he started dating me. I mean, he knew I was a Gator fan but didn't know that I would have the laptop on with 4 games playing (Thanks ESPN!) and T.V. going at the same time. But as a friend said tonight in her FB Status: ''In marriage it is about compromise.... but there is just no compromising about football. Go Gators!!!''
SO TRUE, OH SO TRUE!  


Tonight, what better appetizer to have than some zesty jalapeno poppers! My husband loves spicy foods, he always has the bottle of Siracha aka Rooster Sauce at the table. I got creative and decided to make my own cream cheese mixture. I really hope you enjoy this recipe as much as we did!
  
Kick Off Poppers!
 (Grilled Bacon wrapped Jalapeno's filled with Cream Cheese)

6 Jalapenos (Halved & De-Seeded)
12 Slices of Bacon (We used Turkey Bacon)
  8 oz package of Cream Cheese (We had leftover Cream Cheese, so we put it back in the container to save for later use.)
1/4 Cup Shredded Sharp Cheddar Cheese
1 stalk Green Scallion finely diced
1/4 Red Pepper finely diced
Cilantro to season 
Salt & Pepper to season



1. Slice Jalapeno's in half, De-Seed, rinse well with cold water, pat dry. 
FYI: The seeds of the Jalapeno's contains oils that are VERY HOT!!!

2. Mix Cream Cheese, Cheddar Cheese, Scallion, Red Pepper, Cilantro, Salt & Pepper in a mixer until mixture is softened. 



3. Take mixture and spoon into Jalapeno halves.

 Stay Classy in your game day attire!!!!
                                     


4. Wrap bacon around the Jalapeno's and secure with toothpick.

 5. Place Jalapeno's on a medium temperature grill. Cook until poppers are tender and bacon is well cooked. (Cooking times will vary. Alternate: You can also bake in a pre-heated oven at 350 degrees until bacon is brown and CRISPY. Approx 15-20 minutes.)


 As you can see we cooked up some Johnsonville Brats!

5. Take your HOT Jalapeno's off the grill and place them on your serving tray or plate and ENJOY!

Grilled Pizza

Tom and I recently discovered cooking pizza's on our grill. We just received a Weber Q200 (Gas grill) as a wedding gift and it's the perfect grill for us. Easy to use, cleaning is simple and also we can easily pack it up in our car and use it on a camping trip or whenever we go over to a friends house! 

Side Note: If you are looking for a reasonably priced grill, check our Weber out on Homedepot.com.

Things you will need:
1. A grill, preferably a gas grill.
2. Terracotta Saucer (Bottom of the pot)
3. Good spatula, that is lightly coated with olive oil.


Homemade Dough Recipe:


You can either use whole wheat or regular flour, whatever you prefer.

1tsp or 1/2 packet active dry yeast
4 cups all-purpose flour
1tsp kosher salt
1/3 cup extra virgin olive oil, plus more for drizzling.

* For those who want to do this a quicker way, go to your local grocery stores frozen section or bakery and pick up some dough.

* Before you start making the dough, go outside and crank up that grill all the way and place the terracotta stone inside.

Step 1. 
Pour 1 1/2 cups of warm water into a bowl. Sprinkle yeast over the water and then set aside.

Step 2. 
Combine the flour and salt into a mixing bowl (KitchenAid's are the best for breads, well almost anything!)

Step 3.
With an electric mixer on low speed, drizzle the olive oil until just incorporated.
Step 4. 
In the bowl you put aside earlier (Water & Yeast) gently stir the mixture.

Step 5.
Drizzle the mixture into the flour until dough forms a ball (about 10 minutes our dough balls started to form)

Step 6. 
Drizzle a little olive oil into a clean bowl. Toss the ball of down in the bowl and turn over to coat it in oil. 


Step 7. 
Cover the bowl with a moist kitchen (clean) towel and set in a warm area for 1-2 hours. Or you can cover with plastic wrap and store in the fridge up to two days.

Step 8. 
On a clean cutting board, sprinkle a little bit of flour and place dough on there. Then you can start working the dough out into your pizza shape. When cooking the dough on the grill, it is best to have a thin crust, but if you prefer a thicker crust go for it, but expect to cook 1-3 minutes longer than usual.

Step 9.
TOPPINGS: Whatever your little heart desires, have fun with it! But few tips: make sure you use 1-2tbsp of sauce on your pizza, you don't want a soggy pizza, GROSS! And let your toppings breathe a little, don't do too much stacking on top of each other, otherwise your cheeses and toppings can't cook and it won't taste as good.

Step 10.
Take your board outside with your spatula and gently place on the terracotta saucer (Bottom of saucer place upwards.. deep dish doesn't work as well). 

Step 11.
Cook 8-10 minutes. Take off grill, cut and serve! 

This is so much fun to cook and so easy. 
Invite some friends over soon and have a Pizza night where everyone creates their own pizza and it's even a fun event for families!

Peeked out the window to find my sweet baby Wisco sitting in the chair, a good laugh for me and Tom. He got a few bites of crust. Every time we went back inside we would catch him in one of the chairs waiting again, so cute.
