Beans & Turkey Franks

The past week I've been telling my husband that I want to rent ''The Little Rascals''. Tonight he took me to the video store and let me rent my movie! A Childhood favorite. Not only that, I decided to make a childhood favorite meal: Beans & Franks with creamy cornbread, yummmmmmy! I'm truly a kid at heart and love to embrace past memories. Tonight definitely was one of those moments and Tom loved eating one of my favorite ''kiddie meals''.




Ingredients:

2 cans Heinz homestyle brown sugar & bacon beans
6 Jennie O turkey franks (only .98 at walmart for a 12 pack - we LOVE Jennie O products so good and healthy too.) cut into sizes that you would prefer.
Mix ingredients together in a pot on low for 15-20 minutes

Cornbread:
1 box Jiffy corn muffin mix
1/3 Cup Cream style sweet corn
Follow directions of muffin box, add cream corn, place into greased mini muffin pan and cook for 15 minutes!

In 30 minutes you have a simple & fun family meal!

Avocado Egg Bagel


 Mornings are quite busy for us. I've figured it's totally worth waking up an extra 10 minutes every AM to start off the day with a good nutritious breakfast! My husband Tom loves making breakfast and this morning he definitely spoiled me. We live for simplicity and this breakfast definitely fits into the category.

  • Toast your bagel {we put ours on the panini}
  • Spread fresh avocado on your bottom piece and a pinch of cumin, black pepper & salt.
  • Make a over easy egg and place on top. 
  • BAM! You're done, now enjoy this scrumptious breakfast!

Taco Tuesday


I love Taco Tuesdays! This week we had chicken taco salads topped with fresh avocado's, diced tomatoes, black olives, a dollop of Greek yogurt and salsa, yum! Such a simple meal to make every week and there are so many different ways to do Taco Tuesday!

  • Taco shells: Aztec shells at Wal-Mart around the cheese section {they change ours every few months. Sometimes I will find it where the packaged puddings are and string cheeses.}
  • Chicken is cooked in a skillet. Sauteed peppers along with onions, followed by adding a packet of taco seasoning. 
  • Make sure you don't place your lettuce in your taco shell bowl until it is fully cooled, otherwise you will have wilted lettuce.
  • Layering your salad: lettuce, meat, tomatoes, olives, avocado's, sour cream and salsa.
  • Sprinkle a little cumin and pepper on top for extra flavoring
  • ENJOY!

Pumpkin Spiced Oatmeal Cranberry Cookies {Review}


Hello Fall Y'all! Everyone has seen that motto on Pinterest plenty of times. Tonight I kicked off the Fall season trying out Skinny Taste Blog's { <~ click the link} recipe of ''Pumpkin Spiced Oatmeal Cookies'', but she (Gina) uses pecans in her recipe, which I am not a fan of so I substituted them for cranberries!

Very simple recipe, great flavors and took me approximately 20 minutes from start to end, including washing dishes! They turned out PERFECT and are the right consistency! Give them a shot, you won't be disappointed. Oh! They are not very sweet at all, which I love!
